If I am in a hurry to make quick and delicious meal, I usually go for chicken. You can make a variety of delicious sauces to go with chicken. This is a great recipe if you are nor sure what you are craving exactly - spicy or sweet? It's a combination of both. Enjoy!
Ingredients
2-3 skinless chicken breast
2 tbs. coconut oil; more if needed
1/2 onion, finely diced
1 tbs. curry powder
1 cup chicken broth
1 medium sweet potato, peeled and cut into 1/4 inch dice
1 cup coconut milk
1 tbs. minced fresh ginger
1 tsp minced jalapeno
salt, pepper to taste
fresh cilantro (optional)
Directions
Serve with Cauliflower Rice or other vegetables

Directions
- Cut each breast into 3/4 inch slices and season them with salt and pepper
- Heat the coconut oil until it's hot enough and add chicken and cook, flipping once until lightly browned
- Transfer the chicken to a separate plate
- Return the pan to a medium heat and add the onion, ginger, jalapeno and saute, stirring constantly until the vegetables soften
- Add the curry powder, and saute additionally for 30 sec.
- Add the chicken broth and diced potato. Bring to a simmer and cook for 8 min.
- Add the coconut milk and simmer until the potatoes are fully cooked (5-6 min)
- Add the chicken to the sauce
- Serve immediately
- Sprinkle with cilantro.
